Giada Shaved Artichoke And Fennel Salad

This beautiful Giada shaved artichoke and fennel salad is one of my favorites when I want something quick, easy, and totally delicious. It takes just 8 ingredients and comes together in 30 minutes.

I love how the flavors pop—especially with the artichokes and the tangy taste of fennel. To make it extra special, I like to sprinkle it with extra Parmigiano-Reggiano. It’s simple, fun, and always makes me feel like I’m treating myself.

Recipe Ingredients

  • 1½ tablespoons lemon juice
  • 2 tablespoons extra-virgin olive oil
  • 1½ cups baby arugula
  • 5 baby artichokes, trimmed and thinly sliced lengthwise with a mandoline
  • 1 fennel bulb, stalks removed, sliced thin
  • ½ teaspoon kosher salt
  • ⅛ teaspoon freshly ground black pepper
  • ½ cup Parmigiano-Reggiano shavings

How To Make Giada shaved artichoke and fennel salad

Make the Dressing and Prep the Arugula

  1. Whisk Up the Dressing: In a small bowl, whisk together the lemon juice and olive oil. Get those liquids nice and cozy with each other.
  2. Prep the Arugula: Place the arugula in a separate medium bowl. Spoon a small amount of dressing onto the arugula and toss to coat – we don’t want any arugula left behind!
  3. Plate the Arugula: Spread the arugula on a large plate and set aside. You’re getting close to the good part – the salad!

Build the Artichoke Mixture

  1. Mix It All Together: In a large bowl, combine the sliced artichokes, fennel, remaining dressing, salt, and pepper. Mix well to coat all that deliciousness.
  2. Mound the Artichokes: Mound the artichoke mixture on top of the arugula. You did it – you built a salad!
