- 1/2 cup marinated artichoke hearts (drained)
- 1/2 cup grated mozzarella
- 1/4 cup freshly grated Parmesan
- 1/2 cup mayonnaise
- 12 slices white bread
How To Make Spinach Artichoke Panini Bites
- Preheat Your Oven: Set your oven to 450°F and place a rimmed baking sheet inside to warm up.
- Blend the Filling: In a food processor, combine the cream cheese, sour cream, garlic, lemon zest, salt, spinach, and artichoke hearts. Pulse until smooth.
- Add the Cheeses: Stir in the mozzarella and Parmesan, then pulse until just combined.
- Assemble the Bites: Spread 1/4 cup of mayonnaise over half of the bread slices. Place these slices, mayo-side down, on a second rimmed baking sheet. Evenly spread the spinach mixture over the bread, all the way to the edges. Top with the remaining bread slices and spread the last 1/4 cup of mayonnaise on the tops.
